Pisco, one of the most important ingredients, dates back to the early 17th century with roots stemming from the mining industry. The Peruvian culture has strong connections with its tradition and history, governing many of the current mindsets and behaviors of people today. Peruvians are distinctly proud of their heritage and the Pisco Sour is always a top recommendation from locals.

So what exactly is simple syrup? Water and sugar boiled together into a sweet foundation for our Pisco Sours. Sweet and friendly is how Peruvians describe themselves and how many others would describe them too. As a culture, they are more rambunctious, more prone to laughter, and more open than their Northern American counterparts. Like the simple sugar in a Pisco Sour, they approach foreigners with kindness, business with relationships, and new friends with a laugh and a smile.

The key lime juice really gives a Pisco Sour its distinctive taste—tart, with a bit of a kick. Peru hasn’t always been the rumbling economy it is now. Two decades ago, inflation was at 12,000% and the currency was reintroduced three times. Today, the Peruvians are back in the game and they are unique because of their history. Their success is a hard one, and just like the key lime juice in a Pisco Sour, it is a story with a punch that makes them exactly who they are today.

The first sip of the Pisco Sour is always slightly obscured by the foamy egg white layered over the drink. Be careful to read contexts when speaking with Peruvians. Sometimes they are overly nice to disagree with you directly, but they may not be explicit. In Peru, context in a conversation is very important, and what is not said may be more important than what is verbally confirmed. Listening to the unspoken can help you decipher the foam from the alcohol, the real meaning from the explicit.

As Peru becomes more and more integrated with the global economy, it finds itself becoming Westernized in many aspects. What you find is Western decorations on a strongly traditional culture, the two vying for importance, and the Western influence beginning to dot the surface of an ethnic Peruvian Pisco Sour.

Food is incredibly important in the Peruvian culture and the Pisco Sour can be found at any meal. If you aren't already eating authentic ceviche, ahi de gallina, or lomo saltado, the Pisco Sour will be the sure thing that indicates you are in the thick with the Peruvian culture.
